Sémillon pressed over Chardonnay skins.
Barrel fermented at low temperatures & aged for 6 months on full lees.
Gravity bottled & aged for 18 months prior to release.
This is for those diehard Sémillon fans, with a whisper of Chardonnay for those who need convincing.
Inspired by two of the greatest white grapes known to man, and then taken to the extremes of what would be considered traditional winemaking.
Or called crazy by some.
Peaches, honeysucke & apricot on the nose. Lanolin, honey and smoke whisper through.
The palate is ripe and round with a lovely oily texture and still fresh acidity.
Drink old or now. A wine for the lovers.
Food pairings must meet the luxury of this wine.
Over ripe brie, marron or prawn toast, lobster thermidor or a pork cutlet.
